Is the quantity of heavy whipping cream to make a stick of butter less expensive than buying the butter itself? I’m intrigued now and might try this myself. Does it spoil faster or anything?
What about the gums in the heavy whipping cream? Every package heavy cream I can find at the grocery store contains some kind of gum, even the nicer ones. This doesn’t impact the butter?
Irish soda bread is a type of quick bread that relies on baking soda, not yeast, to rise. The bread contains buttermilk, which contains lactic acid. The acid reacts with the baking soda to create air bubbles, resulting in a perfectly risen dough.
Soda bread became incredibly common during the Irish Potato Famine, as you can make it with only four ingredients: flour, salt, an acid, and baking soda.

If you are buying premium butter and you use the byproduct (buttermilk) then it may be close to break even. But yes it does spoil faster
$6 of heavy whipping cream makes about $8-$12 of butter depending on if you’re buying cheap butter or expensive butter.
You also end up with a lot of buttermilk which I hate buying because I never use it all.
DIY Butter doesn’t spoil any faster and can be frozen.
It also just tastes a lot better.

Good question. I haven’t noticed any issue.
Thank you so much. You’ve inspired me - I’m going to give it a try this weekend. I already make my own bread, so this will be a fun addition.
I used a whipping attachment on my food processor. I haven’t tried more manual methods since I’m lazy.
Just here to say I’m also going to do this! Didn’t really ever think to.
That estimate seems a bit high TBH. A quart of heavy cream will net you less than a pound of butter on average.
Make soda bread with it, it’s delicious
soda…bread?
